Grilled Salmon with Red Pepper Relish

We adore the delightful sweetness and vibrant hue that red bell peppers bring to this relish but feel free to substitute with yellow or orange peppers. However, it’s best to avoid using green peppers, as their slightly bitter flavor may not pair as well with this dish.

Ingredients

  • 1 ½ pounds skin-on salmon fillet, cut into 4 portions
  • ½ teaspoon salt, divided
  • ¼ teaspoon ground pepper
  • 3 medium red bell peppers, quartered, seeds removed
  • ½ medium red onion cut into 1/2-inch-thick slices
  • 1 medium jalapeño pepper
  • 2 tablespoons lime juice
  • 2 tablespoons extra-virgin olive oil
  • 1 tablespoon agave syrup
  • ¼ cup chopped fresh cilantro
  • 2 teaspoons capers, rinsed and chopped

Directions

  1. Preheat the grill to medium-high.
  2. Brush the grill rack with oil. Season the salmon with 1/4 teaspoon salt and ground pepper. Grill the salmon, flipping once, until browned and easily flakes with a fork, approximately 6 to 12 minutes, depending on thickness.
  3. Grill the bell peppers, onion, and jalapeño, turning as needed, until they are charred for approximately 5 to 6 minutes. Remove from heat and allow them to cool slightly.
  4. Coarsely chop the bell peppers and onions, and mince the jalapeño (remove seeds if desired). Whisk together lime juice, olive oil, agave syrup, and the remaining 1/4 teaspoon of salt in a large bowl. Add cilantro, capers, and grilled vegetables. Toss gently to combine.
  5. Serve the grilled salmon with the flavorful relish on top.
